Nanny Logan's Bread & Butter Pickles

16 cups cucumber sliced
6 medium onion sliced
⅓ cup salt
Ice cubes


Put cucumber and onions in a large pot, I like to layer them in my pot ( ½ cucumber  ½ onions). Sprinkle salt over the top and cover with ice cubes.



Once your ice has melted drain liquid off.



In a separate bowl mix together.......



3 cups white vinegar

5 cups white sugar
1 ½ tsp. numeric
1 ½ tsp. celery seed
2 Tbsp. mustard seed


Mix well and pour over cucumber and onions. Bring to a boil, occasionally stirring so your cucumbers look like pickles. Pour into jars and put lids on. They will seal when then cool. 



I get 7 500ml jars from one batch.



Charlotte's Pickled Beets

2 cups apple cider vinegar
2 cups white sugar
2 cups water
5 lbs beets
1 Tbsp salt
1 tsp ground allspice
2 Tbsp whole cloves
Cheesecloth



Cook beets in skins until tender, make sure to leave a little bit of green at the top of your beet when boiling so your colour doesn't bleed out. Run under cold water and slip off skin. Slice and place in jars. 



Boil the remaining ingredients for 5 minutes with spices in cheesecloth. Pour liquid on beets immediately. Seal immediately. 



If bottle doesn't seal properly once cooled, remove lid, apply new lid and boil bottle for 5 minutes. I get 5 500ml jars out of one batch.

Kirha's Oven Rice

This is a new recipe for our house that I absolutely love. If you like easy and delicious this is your rice to make. My friend Tanya made it for church potluck the other month and I've been thinking about it ever since. She kindly shared the recipe with me the other day and I've been enjoying it lots!! It's a great dish if you have a bunch of people to feed.....

Kirha's Rice ( Tanya's sister in law)

2 cups long grain rice
3 ½ cups of water
¼ cup of oil
½ cup soya sauce
frozen peas ( I used 1 cup)
frozen corn ( I used 1 cup)
1 cup chopped celery
1 can mushrooms & juice
1 cup chopped green peppers

Put in roasting pan in order and mix. Bake  covered at 335ยบ F for 1 hour.

Charlotte's Carrot Cake

This is my most FAVOURITE cake ever!!! Love love love it!!!
My mother in-law Charlotte is a stellar cook and this is her carrot cake 
recipe that I just can't stop eating when it's around.

3 eggs
1 cup canola oil

Beat together

Add in : 

2 cups white sugar

Mix together the following and then mix with above ingredients

2 cups flour
1 tsp cinnamon
2 tsp baking soda
2 tsp vanilla
1 tsp salt

After all combined add in....

2 cups shredded coconut
1 cup crushed pineapple
2 cup grated carrots


Grease and flour pan/pans. I personally use a bundt pan. Bake for 1 hr 25 min. Since moving to SK from NS I find it only takes around 1 hour here so keep an eye on it and test around 1 hour.


I then ice it with cream cheese frosting, the thicker the better.....LOL. This recipe is from my BFF Jodie.

Beat 1-8oz block cream cheese with 1/4 cup butter and 1/2 tsp vanilla until smooth. Both will mix better softened. Add 3 to 4 cups of icing sugar. If you like it sweeter add 4 cups-- beat for a few minutes until creamy.

Rhubarb Mallow Cobbler.....

This is the new favorite rhubarb recipe in our house. It comes from our friend Haley Mckim. LOVE LOVE LOVE it!!!! I just need a bigger rhubarb patch so I can eat this year round........

4 cups rhubarb
2 1/2 cups sugar
1 cup mini marshmallows
1/2 cup butter
1 tsp vanilla
1 3/4 cup flour
3 tsp. baking powder
1/2 tsp salt
1/2 cup milk

Combine rhubarb and 1 1/2 cups of sugar. Put in greased dish. Sprinkle marshmallows over top. Mix rest of ingredients and spoon over rhubarb. Bake at 350 for 50-55 minutes.

Saucy Chicken Drumsticks

These are the tastiest chicken drumsticks ever. This is another yummy recipe from my friend Jodie......boy do I miss all her yummy treats!!!


Sauce:
3 Tbsp Soy Sauce
3 Tbsp Water
1/2 tsp salt
1 cup white sugar
1/2 cup vinegar

Whisk together and set aside.

Take 8-10 chicken drumsticks and remove the skin. Cook drumsticks in a little oil in a frying pan on low heat until the are brown and the blood has come out. It looks gross but just do it :)

Remove from frying pan, put in casserole dish and cover with sauce. Bake at 350 for 45 min. I usually serve with rice and veggies. If using more drumsticks I double the sauce recipe. Enjoy!!

Best Brownies.....

This is a recipe I got many years ago from my friend Krista Murphy and they are my favorite brownies. So full of chocolate and they just are amazing while still warm!!! Trust me you won't be disappointed.....


3/4 cup butter, melted
1 1/2 cups white sugar
1 1/2 tsp vanilla

Blend these 3 ingredients together.

3 eggs

Beat and add in to butter/sugar mixture

1/2 tsp salt
1/2 cup cocoa
1/2 tsp baking powder
3/4 cup flour

Combine, mix and stir with above mixture.Then add in:

1 cup chocolate chips

Pour into a greased 8 by 8 pan. Bake at 350 for 40-45 minutes.
Best served warm with ice cream on the side!!!
